01 / ABOUT THE PLACE

About this place

Tucked quietly into the calm residential streets of Ojima in Koto Ward, Ginnan Soba serves refined hand-cut buckwheat noodles and a thoughtful selection of seasonal dishes. Inside its modern concrete exterior, high ceilings create an open, airy dining room complemented by welcoming, hand-illustrated menus.

The main attraction is the soba: slender, supple noodles with an easy swallow and clean buckwheat aroma, served chilled on bamboo trays (seiro) alongside diverse dipping broths and accompaniments. Kamo seiro, served with a hot, savory dipping broth infused with rich duck flavor, and anago ten seiro, featuring fluffy conger eel in light tempura batter, are popular choices that highlight the buckwheat's nuances. Other offerings include oyster seiro, where plump shellfish release their savor into the dipping broth, and hot bowls such as Ginnan soba topped with toasted rice cakes. To finish, a rich, cloudy sobayu is brought to the table to dilute the remaining sauce, leaving a soothing aftertaste.

The shop also embraces the classic "sobamae" tradition of enjoying small bites and drinks before the noodles arrive. The Ginnan Sobamae Set pairs 3 seasonal small dishes with a portion of soba, complementing selections of sake and wine alongside tender toriwasa (lightly blanched chicken) and fluffy rolled omelets (dashimaki tamago). Desserts extend well beyond standard noodle shop fare, offering Japanese chestnut mont blanc, aromatic blancmange, and traditional soba zenzai red bean soup.

Guests can visit at midday for a casual Ginnan lunch set or the shop's distinctive soba-style egg-over-rice, or book a table in the evening to leisurely sip drinks before ending with a bowl of noodles.
